HAMBURGER CASSEROLE

2 lbs. hamburger
1 egg
1/4 cup chopped onion
1 tbs. Worcestershire Sauce
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. sage
1 cup milk

Mix ingredients together & spread in pan. Bake at 350 for 1 hour. Spread with the following:

3 tbs. brown sugar
1/4 cup ketchup
1/4 tsp. nutmeg
1 tsp. mustard

Continue baking for another 30 minutes or more.

DEVILED SWISS STEAK

(Serves 4)

2 Tbs. All-purpose Flour
1 Tbs. Dry Mustard
1/2 tsp. Black Pepper
1 1/2 to 2 lb. Round Steak
2 Tbs. Olive Oil
1 Tbs. Worcestershire Sauce
1 cup Beef Broth
1/2 lb. fresh Mushrooms, sliced

Mix flour, mustard, and pepper in a small mixing bowl. Pound the mixture into both sides of the steak.
Warm the olive oil in a large skillet over medium-high heat and brown the meat in the oil. Add the Worcestershire sauce and beef broth to the steaks, reduce the heat, and simmer for about 2 1/2 hours. Make sure to check the steaks occasionally to coat with sauce and turn.
Add the mushrooms and simmer for an additional ½ hour. Serve warm, with plain egg noodles.

TWENTY MINUTE MEATLOAF

1 pkg. onion soup mix
1 cup sour cream
2 eggs, lightly beaten
2 lbs. chopped beef
1 cup breadcrumbs
1 can mushroom gravy

Preheat oven to 500 degrees. Empty onion mix into a bowl and cover it with sour cream and eggs. Let stand while you brown the chopped beef.Sprinkle breadcrumbs over onion soup mixture. Add the meat. Pour into a buttered loaf pan and bake 15 minutes in 500 degree oven. Turn on broiler and broil for 5 minutes. Heat mushroom gravy and serve on side.

ECONOMY MEATLOAF

1 cup (250 ml) breadcrumbs
3/4 cup (175 ml) onion, chopped fine
1/4 tsp. (1 ml) garlic, chopped
1 1/2 lb (750 g) ground beef
2 eggs
2 tsp. (10 ml) beef bouillion powder
1 cup (250 ml) tomato juice
1/4 cup (50 ml) ketchup
1/4 tsp. (1 ml) pepper
1/4 tsp. (1 ml) salt

Mix together all ingredients, except the ketchup. Place into a loaf pan, or shape into a loaf and place on a baking sheet. Spread with ketchup and bake at 350 F (180 C) for 1 1/4 hours. Let stand for 5 minutes before slicing.

BEEF STROGANOFF

3/4 lb. boneless Beef Sirloin Steak, 3/4-inch thick
1 tsp. Olive Oil
14-oz. can Beef Broth with Onion
2 cups fresh Mushrooms, sliced
3 cups uncooked Egg Noodles
1/2 cup Sour Cream

Slice the sirloin into very thin strips across the grain of the steak.
Warm the olive oil in a non-stick skillet over medium-high heat. Brown the steak pieces for about 5-minutes, stirring often.
Add the seasoned beef broth and mushrooms. Bring the mixture to a boil and stir in the dry noodles.
Reduce the heat, cover and cook over a simmer for about 10-minutes, or until the noodles are cooked through.
Stir in the sour cream and let it warm through the mixture. Serve immediately.
